Hot Dog Enchiladas

I have been wanting to try the following recipe for some time.  We eat a lot of hotdogs and this seemed like a fun way to beef them up.  I made my recipe way more simply than this one. 
  Hot Dog Enchiladas
Ingredients:

Directions:

  1. Grill hot dogs.
  2. Combine picante sauce and chili.
  3. Heat tortillas in microwave or in a skillet.
  4. Place cheese slices in tortillas.
  5. Place hot dogs in middle of tortillas and roll tortilla so hot dog and cheese is enclosed.
  6. Preset oven for 350°F.
  7. Pour half picante chili mixture in casserole dish.
  8. Place hot dogs wrapped in tortillas into the casserole.
  9. Top with remaining picante chili mixture.
  10. Cook in oven for 20 minutes.
  11. Take out of oven and top with cheese chopped onion and green chiles
  12. Place back in oven until cheese has melted.
  13. Take out cool and enjoy.
I sprayed the bottom of a glass dish with Pam. Put a little chili sauce on the bottom of the pan, wrapped cheap hotdogs in flour tortillas, added to the pan, covered with cheap chili with no beans (hot dog chili – I get at Walmart for .50 a can – I used two cans), covered with chili sauce and shredded cheese and then baked. They were a hit.

I have also added homemade enchilada sauce to the canned chili to make it go further.

Cheap, quick, hearty and good!!!  Can’t get better than that… especially on a low budget week!!!
