We will sometimes have a Chili week or a Beans week – where I make a big batch of one of those and serve it all week by changing it up and making different meals all week with it:
Here is a sample of one of our Chili Weeks:
Chili Week:
Monday – Chili (with all the fixins’ – sour cream, onions, black olives, etc.)
Tuesday - Chili Baked Potatoes (serve over baked potatoes)
Wednesday – Chili Corn Bread Casserole*
Thursday – Chili Mac (serve chili over pasta)
Friday – Chili Nachos (serve chili over nacho or tortilla chips - with cheese)
Saturday – Chili Subs (serve chili on sub sandwich bun with cheese)
Sunday – Chili Soup **

* Recipe Corn Bread Casserole
Put cooked chili in a Casserole pan or a glass bake pan. Make 1 -2 boxes of corn bread mix according to directions. Pour the corn bread mixture over the chili and bake at 350 degrees until the corn bread is baked.
** Recipe Chili Soup
1 can tomato juice (46 oz.)
1 can tomato soup
1/2 cup of pasta
Add the above ingredients to chili and cook on medium until heated through.
